It’s the beginning of February and most of Roosevelt county has been blanketed with snow. Here are three meals perfect for the cold weather that you can set and forget – for a few hours or so.
Chili
Chili is a hearty classic and one of those base recipes you can add multiple ingredients to. Perfect for a cold day and a number of servings, you’re going to be wishing you had leftovers.
Ingredients:
- 1lb ground beef
- 1 can kidney beans
- 1 can black beans
- 1 can chili beans
- 1 can diced tomatoes

Before you plug in your slow cooker, cook the ground beef in a pan until done, drain and add to the slow cooker. Empty the beans and tomatoes into the slow cooker, add your desired seasonings and stir to combine; then set on high for 4 hours and stir halfway through. Enjoy with some cheese and corn chips or in a bowl by itself.
Chicken Noodle Soup
Chicken Noodle Soup is a classic for both winter and flu season, and what a better time than now to have an excuse to make yourself a nice pot to warm your tummy.
Ingredients:
- 2-3 Chicken Breasts
- ½ bag egg noodles
- 1 carrot
- 1 chopped celery stalk
- 1 cup Peas
- 4 cups Chicken Stock
- 1 cup water
Instructions:
Place chicken breasts, stock and water into the slow cooker, set on high and let cook for two hours or until chicken is cooked through. Once chicken breast is cooked through, shred and add back to liquid. Chop celery and carrot into roughly half inch pieces and add to chicken and liquid with peas. Let cook for another hour before adding noodles. Turn to low and cook for another two hours. Check that noodles are desired tenderness, then season to taste and enjoy.
Green Chile Stew
For those who like more heat to their food, this is the recipe for you. How better to ride out the cold than a nice hot bowl of green chile stew? This recipe is super simple and is great if you’re pressed for time and don’t know what to make for dinner.
Ingredients:
- 14 oz diced Green Chile
- 8 medium Potatoes
- 1lb Ground Beef
- 2 cups beef broth
Instructions:
First, cook the ground beef until done. Then, peel and cube the potatoes and dump all the ingredients into your slow cooker and cook on high for 4 hours or on low for 8. Make sure the potatoes are done and dig in!
Food is always the best when it’s homemade, and when it doesn’t require much work it’s even better! With just a slow cooker and some ingredients, you can make a ton of different things without needing much skill at all.
